You just can't beat a bowl of really good, vanilla ice cream. Especially when it's home made and you know exactly what has gone into it (ie. no scary e-numbers etc) So I thought I'd share my recipe with you.
Beat together 3 egg yolks and between 100-120g sugar (I use golden caster sugar) until light and creamy.
Add 1/2 - 3/4 teaspoon vanilla bean paste (I swear by this stuff and you can use it in all other baking. I get it in Waitrose) You could also use vanilla extract, or substitute the sugar for vanilla sugar if you prefer.
Whisk 300ml whipping cream until thick but still liquid then add to the mixture, along with 100ml milk. Give it a quick whisk to make sure everything is combined, then poor into your icecream machine and leave it to do it's stuff.
You can adjust the quantities of sugar and vanilla slightly according to your taste.
It's not going to win any awards for being healthy, but I think it's bloody delicious!
(NB. Obviously, as this contains raw eggs, do not eat if pregnant) I personally have no qualms about feeding it to my kids though, and they love it)
